Chewy Chocolate Chunk Oatmeal Cookies

Chewy cookies are the best way to eat a cookie, you can fight me on that but you will lose. Oatmeal cookies are awesome as they up the chewiness factor in the cookie and the awesomeness as well. I have learned from my brother that actual chocolate bars are 1000 times better in cookies then chips, so I now just chop chocolate bars into my cookie batter and the delicious level rises once more. These cookies will rise to domes in the oven, and not look chewy or done but take them out and let them cool on the sheet pan for a few minutes before moving them to a cooling rack. Enjoy while this recipe makes lots of cookies, there were no leftovers.

INGREDIENTS
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon optional
  • 1/2 tsp sea salt
  • 1 cup unsalted butter room temperature
  • 1 cup light brown sugar packed
  • 1/4 cup granulated sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla
  • 3 cups rolled oats
  • 1 1/2 bars dark chocolate chopped

INSTRUCTIONS

  1. In a medium bowl, whisk flour, cinnamon, baking soda, and salt. Set aside.
  2. In the bowl of an electric mixer, beat butter and sugars on med-high until pale and fluffy (approx. 3 minutes).
  3. Add eggs one at a time, fully incorporating after each addition, and beat on high for 1 minute. Add vanilla.
  4. Turn mixer to low and add flour mixture, mix until combined.
  5. Add oats and chocolate chunks. Mix until just combined.
  6. Chill dough in the fridge for an hour (optional, but yields better results).
  7. Preheat oven to 350F and line a baking sheet with parchment.
  8. Using a small cookie scoop, place cookies on baking sheet.
  9. Bake for 10mins or until edges are lightly browned but the center is still soft and unset.
  10. Cool for 5 minutes on baking sheet, then transfer to cooling rack to cool completely.
