Roasted Tomato Soup

This soup has been a family favorite for many years, I am finally getting it down for everyone now. It's great as unlike most soups, this one is mostly cooked in the oven and on one sheet tray. There is some preparation needed, then the oven does all the work. You can blend the soup in a blender, food processor or in a pot with a hand blender. I love this soup both warm and cold and always served with rice. If you wanted to dress it up you could serve it with green onions or any type of cheese but it is delicious on its own as well. Ingredients

  • 2 large Vidalia onions
  • 6 small tomatoes 
  • 1/4 cup brown sugar 
  • 2 tablespoons oregano
  • 5 cloves garlic
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil
  • salt and pepper to taste

How-To:
  1. Preheat oven to 200 degrees Celsius
  2. Chop onions and tomatoes in quarters  
  3. Spread both veggies on a sheet tray, breaking apart the onion layers
  4. Sprinkle all the spices over the veggies
  5. Roast till the tips are charred then blend till desired texture.  Can be served warm or cold,best with rice
